Migrate to new wagmi + viem

• Bumped node suggested version to >=18.15.0
• Removed ethers dep
• Added viem dep & bumped wagmi dep to 1.4.12
• Added not ie <= 99 && not android <= 4.4.4 to the browserlist for prod to fix some compatibility issues with the dep upgrades
• Added https://verify.walletconnect.org/ to the CSP and updated all csp hashes
• Removed all use of ethers throughout the app & replaced with viem equivalents (contract instances etc)
• Switched to an asyn wallet disconnect hook to ensure better wallet cleanup for WalletConnect users
• Added better error message handling to the redux actions
• Replaced all the outdated use of old wagmi hooks/vars by following each migration guide between each version on the way up. ie. useSigner -> useWalletClient etc
